Coriander Chicken with Lemon & Garlic

Ingredients

  • 4 garlic cloves
  • 4 Tbsp coriander leaves plus extra for garnishing
  • Black pepper to taste
  • 2 tsp sugar
  • Juice of 2 lemons
  • 2 Tbsp Thai fish sauce
  • 1 Tbsp Soya sauce
  • 1 Tbsp Oil
  • 4 Skinless chicken breasts

Cooking Instructions

  1. Finely chop garlic & coriander.
  2. Add black pepper, sugar, lemon juice, fish sauce, soy & oil to the chopped garlic & coriander.
  3. Cut chicken in to cubes & coat with marinade.
  4. Cover marinated chicken & refrigerate for at least an hour ( if possible leave overnight in marinade)
  5. Preheat griddle pan & cook for 12minutes or until cooked & browned.
  6. Serve with rice or couscous.
  7. Garnish with coriander.
