Herby Roast Potatoes

  • 30g Pack Roasting Mix herbs (Sage, Rosemary, Thyme) - chopped
  • 4 Tbsp. Vegetable Oil or Goose fat
  • 8 Small-Medium Potatoes peeled or 4 large ones peeled and cut in half
  • 2 x Garlic cloves
  • Sea Salt
  • Cracked Black Pepper

Cooking Instructions

  1. Bring a large pan of salted water to the boil.
  2. Peel the potatoes. Place into the boiling water.
  3. Boil for 10 minutes.
  4. Drain and allow to steam and cool completely.
  5. Take a large roasting tin and heat on the hob over a medium heat.
  6. Add the oil or goose fat and heat until oil is hot.
  7. Carefully add the potatoes and turn over a few times to coat in the oil.
  8. Place in a pre-heated hot oven at 200 Deg C/Fan 190 Deg C/Gas mark 6.
  9. Cook for 20 minutes then add the whole unpeeled garlic cloves and chopped herbs.
  10. Cook for a further 20 minutes until potatoes are golden and crispy.
  11. Season with sea salt and black pepper to taste.
