Salmon with Lime, Coriander & Chilli Crust

Ingredients

  • Finely Grated Zest of 1 Lime
  • 1 Red Chilli finely chopped
  • 2 Tbsp. chopped Coriander
  • 1Tbsp Olive Oil
  • Salt & Pepper to taste
  • 4 Salmon Skinless Fillets
  • Broccoli
  • Steamed Rice

Cooking Instructions

  1. Preheat oven to 220C.
  2. Mix Lime zest, chopped chilli, chopped coriander & oil to make a paste.
  3. Press paste onto fish fillets.
  4. Bake fish fillets on a baking tray for 15 minutes or until cooked.
  5. Serve with rice & steamed broccoli.
