Herby Omelette

  • 20g pack fresh chives, chopped
  • 30g FL parsley, chopped
  • 16 eggs
  • 5 tbsp butter
  • 4 tbsp single cream
  • 150g mature cheddar cheese
  • 200g button mushrooms
  • Salt & pepper

Cooking Instructions

  1. Heat 1 tbsp of butter in a non-stick frying pan. Add the mushrooms and stir fry for 4-5 mins. Set aside.
  2. Pre-heat the grill to medium high.
  3. Put the eggs, cream, herbs and seasoning in a large mixing bowl and whisk together with a fork.
  4. On the hob, heat 1 tbsp of butter in a pan and, once sizzling, add ¼ of your egg mixture. Tip the pan to spread the mixture over the pan surface and let the egg cook for 5-7 minutes.
  5. Add ¼ of the fried mushrooms and ¼ of the cheese. Pop the pan under the pre-heated grill for a couple of minutes until the cheese has melted. Flip one half of the omelette over the other in the pan and slide out onto a plate.
  6. Repeat until create another 3 omelettes.
